Oyster mushrooms have a subtly woodsy, delicate, and savory flavor, with a hint of complexity at the finish. Some people say they have a slight seafood flavor or a subtle black licorice finish. Either way, they are best eaten fried or saute`ed, we do not recommend eating them raw. Our personal recommendation is to prepare them as if they were the coveted Morel mushroom, as they will have a surprisingly similar flavor! An excellent mushroom to satisfy those spring Morel cravings, at a much cheaper cost, and now available year round! Their color ranges from blue, brown, white, gray, and yellow.
