Shiitake mushrooms have a rich, buttery, meaty flavor, quite unique compared to the flavors of other mushroom varieties. Their light to dark brown caps and cream-colored flesh is firm and meaty, and the stem, though flavorful, is fibrous and often removed before cooking. While you can eat shiitake mushrooms raw, they're flavor is much more pronounced and developed when they're cooked. These are a very versatile mushroom that can be added to almost any dish! When dried, the shiitake's flavors concentrate to a smoky richness. Shiitake mushrooms have been popular in Asia for over 1,000 years and have been used in many gourmet Asian cuisine.
